SUCKLING PIG WITH GREEN BEANS

“I first went to Supper Inn in the mid nineties. Groups of us would gravitate there after friends' exhibition openings. The fun would start in the queue which often snaked from the neon lit bluestone laneway up the steep stair case. There were always lots of tipsy conversations so the wait never seemed that long. Eventually the door at the top would open and we would be ushered to a big circular table. Surrounded by wood panelled walls dotted with decades worth of decommissioned air-con units, we feasted. Our lazy-susan heaved with scrumptious dishes like crispy skin chicken (dipped in 5 spice salt), garlic kai lan and my all time favourite: suckling pig with green beans. 25 years on I still visit Supper Inn. The decor has changed but my dish of choice remains the same.”
