Chat Thai’s version instantly reminds me of my Thailand trips, where I overdosed on the dish morning, noon and night at the beach. What makes it even more flavoursome and delicious is the fact that I’ve known Amy and Palisa for some time and have been on the receiving end of their generous, warm- heartedness on their Boon Luck Farm as well as in their eateries.
